Peruvian-Style Tofu with Creamy Cilantro Sauce

Ingredients

  • 2 tbsp extra-virgin olive oil
  • 2 tbsp soy sauce
  • 2 tsp kosher salt (or 1ΒΌ tsp Morton kosher salt)
  • 2 tsp ground cumin
  • 2 tsp sugar
  • 2 tsp paprika
  • Freshly ground pepper
  • 2 (14 oz) blocks firm tofu, drained
  • 1 bunch cilantro, bottom 1 inch of stems removed, cut into 2 inch pieces
  • 6 scallions, cut into 2 inch pieces
  • 1/2 avocado, pitted and peeled
  • 1 serrano chile, stem removed
  • 1 small garlic clove
  • 1/4 cup fresh lime juice
  • 1/4 cup mayonnaise
  • 1/2 tsp ground cumin
  • Vegetable oil, for grill

Steps

  1. In a bowl, whisk together olive oil, soy sauce, salt, cumin, sugar, paprika, and pepper to make a marinade.
  2. Slice tofu blocks and coat with the marinade; let sit briefly to absorb flavor.
  3. Preheat grill and oil the grates.
  4. Grill tofu slices until charred and heated through, turning once.
  5. In a blender, combine cilantro, scallions, avocado, serrano chile, garlic, lime juice, mayonnaise, and cumin; blend until smooth to make the sauce.
  6. Plate the grilled tofu and spoon the creamy cilantro sauce over top before serving.
