Peruvian-Style Tofu with Creamy Cilantro Sauce

Ingredients
- 2 tbsp extra-virgin olive oil
- 2 tbsp soy sauce
- 2 tsp kosher salt (or 1ΒΌ tsp Morton kosher salt)
- 2 tsp ground cumin
- 2 tsp sugar
- 2 tsp paprika
- Freshly ground pepper
- 2 (14 oz) blocks firm tofu, drained
- 1 bunch cilantro, bottom 1 inch of stems removed, cut into 2 inch pieces
- 6 scallions, cut into 2 inch pieces
- 1/2 avocado, pitted and peeled
- 1 serrano chile, stem removed
- 1 small garlic clove
- 1/4 cup fresh lime juice
- 1/4 cup mayonnaise
- 1/2 tsp ground cumin
- Vegetable oil, for grill
Steps
- In a bowl, whisk together olive oil, soy sauce, salt, cumin, sugar, paprika, and pepper to make a marinade.
- Slice tofu blocks and coat with the marinade; let sit briefly to absorb flavor.
- Preheat grill and oil the grates.
- Grill tofu slices until charred and heated through, turning once.
- In a blender, combine cilantro, scallions, avocado, serrano chile, garlic, lime juice, mayonnaise, and cumin; blend until smooth to make the sauce.
- Plate the grilled tofu and spoon the creamy cilantro sauce over top before serving.
