Black Bean Chili

Ingredients

  • 1 Tbsp olive oil
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 1/2 lb ground beef
  • 3 (15 oz) cans black beans, drained
  • 1 (10 oz) can diced tomatoes with green chiles
  • 1 (6 oz) can tomato paste
  • 1 Tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 2 cups water

Steps

  1. Dice the onion and mince the garlic. Add both to a large pot with the olive oil and cook over medium heat until the onions soften, about 2-3 minutes.
  2. Add the ground beef and sauté until cooked through, 5-7 minutes.
  3. Add the drained black beans, diced tomatoes with juices, tomato paste, chili powder, cumin, smoked paprika, oregano, and water. Stir to combine.
  4. Cover and bring to a simmer. Simmer for about 15 minutes, stirring occasionally, until flavors blend and the liquid thickens slightly.
  5. Taste and add salt as needed. Serve with desired toppings.

Notes

Salt amount may need adjusting depending on the sodium content of canned ingredients.
