Black Bean Chili

Ingredients
- 1 Tbsp olive oil
- 1 yellow onion, diced
- 4 cloves garlic, minced
- 1/2 lb ground beef
- 3 (15 oz) cans black beans, drained
- 1 (10 oz) can diced tomatoes with green chiles
- 1 (6 oz) can tomato paste
- 1 Tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 2 cups water
Steps
- Dice the onion and mince the garlic. Add both to a large pot with the olive oil and cook over medium heat until the onions soften, about 2-3 minutes.
- Add the ground beef and sauté until cooked through, 5-7 minutes.
- Add the drained black beans, diced tomatoes with juices, tomato paste, chili powder, cumin, smoked paprika, oregano, and water. Stir to combine.
- Cover and bring to a simmer. Simmer for about 15 minutes, stirring occasionally, until flavors blend and the liquid thickens slightly.
- Taste and add salt as needed. Serve with desired toppings.
Notes
Salt amount may need adjusting depending on the sodium content of canned ingredients.
