Zoodles - Zucchini Noodles in Creamy Sauce

Ingredients

  • 1 yellow zucchini (about 250-300 g)
  • 1 green zucchini (about 250-300 g)
  • 1 small onion (about 50 g)
  • 1 garlic clove
  • 100 g sour cream or crème fraîche
  • 70 g herb butter
  • 50 g Parmesan, grated
  • 1/2 tsp salt
  • black pepper, to taste
  • 1 splash lemon juice

Steps

  1. Wash the zucchini and cut into noodles (zoodles) using a spiralizer.
  2. Peel and finely dice the onion and garlic. Grate the Parmesan.
  3. Melt the herb butter in a large pan and sauté the onion and garlic over low-medium heat for about 2 minutes.
  4. Add the zoodles to the pan, season with salt and pepper, and cook over medium-high heat for about 3 minutes for a bite, or up to 5 minutes for softer noodles.
  5. Stir in the Parmesan, sour cream (or crème fraîche), and a splash of lemon juice. Let sit for 1 minute before serving.
