Homemade Baguette

Ingredients
- 450 g flour (type 550)
- 280 ml lukewarm water
- 140 g ice cubes
- 50 g breadcrumbs or dried stale bread
- 20 g fresh yeast
- 2 tbsp olive oil
- 1 tsp salt
Steps
- Preheat the oven to 200°C (top/bottom heat) at least 15-30 minutes before baking, so it's fully hot.
- Dissolve the yeast in the lukewarm water in a mixing bowl.
- Add the flour, breadcrumbs, salt, and olive oil to the yeast water.
- Knead everything with a dough hook on low speed for 2 minutes, then on medium speed for 3 minutes.
- Shape the dough into a ball on an unfloured surface, return it to the bowl, cover with a towel, and let rise at room temperature for 60 minutes.
- Divide the dough into two equal pieces with a dough scraper, then stretch or roll each piece into a long strand.
- Place both strands on a baking sheet lined with parchment paper, cover, and let rise for another 15 minutes.
- Dust each strand with flour, then make several diagonal, deep cuts along the top with a bread knife.
- Place the baking sheet on the second rack from the bottom in the preheated oven, add the ice cubes to the oven floor, close the door quickly, and bake for 35 minutes.
- About 5 minutes before baking is finished, spray the baguettes with water and continue baking for the remaining time.
