Fladenbrot (Turkish Flatbread)

Ingredients

  • 1 egg (size M)
  • 500 g flour (type 405)
  • 300 ml lukewarm water
  • 21 g fresh yeast
  • 15 ml milk
  • 2 tbsp olive oil
  • 2 tsp salt
  • 1 pinch sugar
  • Olive oil, for the pan and topping
  • Sesame seeds, white or black, for sprinkling (or nigella seeds)

Steps

  1. Stir the fresh yeast into the lukewarm water, then add the olive oil and egg.
  2. In a large bowl, mix the flour with the salt and sugar.
  3. Pour the yeast mixture into the flour and knead with a stand mixer or hand mixer with dough hooks for 10 minutes until a soft, sticky dough forms.
  4. Place the dough in an oiled bowl, cover, and let rise for 45 minutes.
  5. Turn the dough out onto a baking sheet lined with parchment paper; it should naturally spread into a round or oval shape. Shape further with damp hands if needed.
  6. Cover with a kitchen towel and let rise for another 45 minutes.
  7. Score the dough into 4x4 cm squares with a knife and brush with about 2 tbsp olive oil.
  8. Preheat the oven to 200°C (fan) and bake the flatbread on the middle rack for 20-25 minutes.
  9. Immediately after baking, brush the bread with milk for shine and sprinkle with sesame seeds.
