Broccoli Salad with Apple, Bell Pepper and Corn

Ingredients

  • 300 g broccoli florets
  • 1 red bell pepper
  • 1 apple
  • 1 can corn (125 g)
  • 25 g sunflower seeds
  • 30 ml vegetable oil (e.g. rapeseed or sunflower oil)
  • 20 ml balsamic vinegar
  • 1 tsp honey (or agave syrup for a vegan option)
  • 1 tsp medium-hot mustard
  • 1 tsp salt
  • 1 pinch black pepper, freshly ground

Steps

  1. Cut broccoli florets close to the thick stalk, weigh out 300 g, wash and roughly chop (save the stalk for soup).
  2. Wash the bell pepper and apple, quarter them, and remove seeds/core.
  3. Drain the canned corn in a sieve.
  4. If you don't have a food processor, dice the vegetables finely and grate the broccoli coarsely.
  5. Place the chopped broccoli, bell pepper, and apple into a food processor.
  6. Add the oil, balsamic vinegar, honey, mustard, salt, and pepper to the processor.
  7. Pulse everything for about 5-10 seconds until finely chopped.
  8. Transfer the mixture to a bowl and fold in the drained corn and sunflower seeds.
  9. Serve and enjoy.
