Cauliflower Salad with Spicy Dressing

Ingredients
- 1 kg cauliflower
- 15 g flat-leaf parsley
- 3 sun-dried tomatoes in oil (optional)
- 1 small red onion (or 2 spring onions)
- 1 small garlic clove
- 5 tbsp olive oil
- 4 tbsp white wine or apple cider vinegar
- 1 tsp medium-hot mustard
- 1/2 tsp honey
- 1/2 tsp salt
- 1 pinch black pepper, freshly ground
- 1 pinch allspice (optional)
- 25 g sliced almonds or chopped hazelnuts (optional, for serving)
Steps
- Trim the cauliflower and cut it into small florets. Wash in cold water and drain.
- Bring salted water to a boil in a large pot and cook the cauliflower florets for about 5 minutes (longer if you prefer it softer). Drain, rinse with cold water, and drain again.
- Peel and finely chop the onion and garlic (or press the garlic). Finely chop the sun-dried tomatoes and the parsley.
- In a bowl, mix the vinegar, 2 tbsp water, mustard, honey, salt, pepper, allspice, garlic, and olive oil with a whisk until emulsified and creamy. Optionally add a little oil from the sun-dried tomato jar for extra flavor.
- Place the cooked cauliflower in a large salad bowl and mix with the dressing, parsley, sun-dried tomatoes, and onion. Let the salad sit for at least 30 minutes. Season with salt and pepper before serving, and sprinkle with almonds if desired.
- Serve with fresh bread.
