Chicken with Tomato Rice and Salad

Ingredients

  • 1 chicken cutlet
  • 70 g rice
  • 1/4 yellow onion
  • 1 tsp tomato paste
  • 1/4 clove garlic
  • 1 tbsp Greek yogurt
  • 1 handful mixed salad greens

Steps

  1. Cook the rice in salted boiling water according to package instructions, then drain.
  2. Peel and finely mince the onion.
  3. Heat a drizzle of olive oil in a pan over medium heat. Add the onion and tomato paste, and cook for 4-5 minutes.
  4. Add the cooked rice to the pan. Season with salt and pepper, and cook for 2-3 minutes, stirring occasionally.
  5. Meanwhile, heat a drizzle of olive oil in a second pan over medium heat. Add the chicken, season with salt and pepper, and cook for 4-5 minutes on each side until golden and cooked through.
  6. Prepare the yogurt sauce: in a bowl, mix the Greek yogurt, grated garlic, and a drizzle of olive oil. Season with salt and pepper.
  7. Serve the tomato rice with the chicken, yogurt sauce, and dressed salad greens.
