Chicken with Tomato Rice and Salad

Ingredients
- 1 chicken cutlet
- 70 g rice
- 1/4 yellow onion
- 1 tsp tomato paste
- 1/4 clove garlic
- 1 tbsp Greek yogurt
- 1 handful mixed salad greens
Steps
- Cook the rice in salted boiling water according to package instructions, then drain.
- Peel and finely mince the onion.
- Heat a drizzle of olive oil in a pan over medium heat. Add the onion and tomato paste, and cook for 4-5 minutes.
- Add the cooked rice to the pan. Season with salt and pepper, and cook for 2-3 minutes, stirring occasionally.
- Meanwhile, heat a drizzle of olive oil in a second pan over medium heat. Add the chicken, season with salt and pepper, and cook for 4-5 minutes on each side until golden and cooked through.
- Prepare the yogurt sauce: in a bowl, mix the Greek yogurt, grated garlic, and a drizzle of olive oil. Season with salt and pepper.
- Serve the tomato rice with the chicken, yogurt sauce, and dressed salad greens.
