Greek Tzatziki

Ingredients
- 500 g Greek yogurt, 10% fat
- 1 large cucumber
- 2-3 garlic cloves
- 1 handful fresh dill
- 1 splash fresh lemon juice
- 1 tbsp olive oil
- 1 tbsp mild white balsamic vinegar (or white wine vinegar)
- Salt and black pepper, to taste
Steps
- Peel the cucumber, halve it, remove the seeds, and grate it coarsely onto a clean kitchen towel.
- Wrap the grated cucumber in the towel and wring out as much liquid as possible; repeat a few times.
- In a bowl, mix the yogurt with the pressed garlic, olive oil, balsamic vinegar (or white wine vinegar), and lemon juice.
- Stir in the squeezed cucumber and chopped dill, then season with salt and black pepper.
- Refrigerate for at least 1 hour before serving to let the flavors develop.
