Greek Tzatziki

Ingredients

  • 500 g Greek yogurt, 10% fat
  • 1 large cucumber
  • 2-3 garlic cloves
  • 1 handful fresh dill
  • 1 splash fresh lemon juice
  • 1 tbsp olive oil
  • 1 tbsp mild white balsamic vinegar (or white wine vinegar)
  • Salt and black pepper, to taste

Steps

  1. Peel the cucumber, halve it, remove the seeds, and grate it coarsely onto a clean kitchen towel.
  2. Wrap the grated cucumber in the towel and wring out as much liquid as possible; repeat a few times.
  3. In a bowl, mix the yogurt with the pressed garlic, olive oil, balsamic vinegar (or white wine vinegar), and lemon juice.
  4. Stir in the squeezed cucumber and chopped dill, then season with salt and black pepper.
  5. Refrigerate for at least 1 hour before serving to let the flavors develop.
