Watermelon Feta Salad

Ingredients
- 1 kg watermelon flesh, seedless or nearly seedless
- 200 g feta cheese
- 3-4 sprigs fresh mint
- 1/2 lime, juiced
- 1/2 orange, juiced
- 50 g pine nuts
- 1 tbsp lime zest
- 2 tbsp olive oil
- 1 tbsp honey
- 1 pinch chili flakes
- Salt, to taste
Steps
- Cut the watermelon and weigh out about 1.5 kg with rind to yield 1 kg of flesh.
- Cut the watermelon flesh into approximately 1.5 cm cubes and place in a bowl.
- In a separate bowl, juice the lime and orange. Whisk together with olive oil and honey, then season with chili flakes and salt to make the dressing.
- Pour the dressing over the watermelon cubes and let marinate briefly.
- Crumble the feta into pieces. Wash the mint and pluck the leaves into small pieces. Zest the lime. Toast the pine nuts in a dry pan over medium heat until golden brown.
- Combine all ingredients with the marinated watermelon in a salad bowl, or arrange on plates: distribute the watermelon evenly, then top with feta, pine nuts, mint leaves, and lime zest.
- Optionally, serve in a hollowed-out watermelon half for presentation.

For an eye-catching presentation, serve the salad in a hollowed-out watermelon shell.
