Ground Turkey Stir Fry

Ingredients

  • 1/4 cup soy sauce
  • 1/2 tablespoon toasted sesame oil
  • 1/2 tablespoon brown sugar
  • 1 pinch red pepper flakes (optional)
  • 1 tablespoon water
  • 2 bell peppers, diced
  • 4 green onions, sliced
  • 2 oz spinach (about 2 large handfuls)
  • 2 tablespoons cooking oil
  • 2 cloves garlic, minced
  • 19 oz ground turkey
  • 1/4 cup chopped peanuts
  • 2.5 cups cooked brown rice

Steps

  1. Stir together soy sauce, sesame oil, brown sugar, red pepper flakes, and water until the sugar dissolves. Set the sauce aside.
  2. Dice the bell peppers and slice the green onions.
  3. Heat cooking oil in a large skillet over medium heat. Add ground turkey and minced garlic. Cook, stirring, until the turkey is cooked through and no liquid remains, about 8-10 minutes.
  4. Add the bell peppers and green onions to the skillet. Cook for about 2 minutes.
  5. Add the spinach and cook until about half wilted, 1-2 minutes.
  6. Pour in the stir fry sauce and stir until everything is coated and the spinach is fully wilted, about 2 minutes more.
  7. Serve about 1 cup of the stir fry mixture over 1/2 cup rice, topped with chopped peanuts.
