Ground Turkey Stir Fry

Ingredients
- 1/4 cup soy sauce
- 1/2 tablespoon toasted sesame oil
- 1/2 tablespoon brown sugar
- 1 pinch red pepper flakes (optional)
- 1 tablespoon water
- 2 bell peppers, diced
- 4 green onions, sliced
- 2 oz spinach (about 2 large handfuls)
- 2 tablespoons cooking oil
- 2 cloves garlic, minced
- 19 oz ground turkey
- 1/4 cup chopped peanuts
- 2.5 cups cooked brown rice
Steps
- Stir together soy sauce, sesame oil, brown sugar, red pepper flakes, and water until the sugar dissolves. Set the sauce aside.
- Dice the bell peppers and slice the green onions.
- Heat cooking oil in a large skillet over medium heat. Add ground turkey and minced garlic. Cook, stirring, until the turkey is cooked through and no liquid remains, about 8-10 minutes.
- Add the bell peppers and green onions to the skillet. Cook for about 2 minutes.
- Add the spinach and cook until about half wilted, 1-2 minutes.
- Pour in the stir fry sauce and stir until everything is coated and the spinach is fully wilted, about 2 minutes more.
- Serve about 1 cup of the stir fry mixture over 1/2 cup rice, topped with chopped peanuts.
