Goat Cheese & Sun-Dried Tomato Samosas (Air Fryer)

Ingredients
- 1.5 sheets brick pastry (feuille de brick)
- 30 g fresh goat cheese
- 30 g cream cheese
- 10 g sun-dried tomatoes
- 1 tsp liquid honey
- 2 handfuls arugula
- salt and pepper, to taste
Steps
- Drain the sun-dried tomatoes and cut into thin strips.
- In a bowl, mix the goat cheese, cream cheese, sun-dried tomatoes, and honey. Season lightly with salt and pepper.
- Cut the brick pastry sheets in half; each half sheet makes one samosa, using two halves per full sheet.
- Lightly oil a half sheet of brick pastry (sun-dried tomato oil works well) and fold it in half lengthwise. Place a portion of the filling at one end, making about 3 samosas per person.
- Fold the corner of the pastry over the filling to form a triangle, then continue folding triangle-style until the strip is used up. Repeat with remaining pastry and filling.
- Arrange the samosas in the air fryer basket and cook at 200°C for 7 minutes, until golden and crispy.
- Remove from the air fryer and serve with dressed arugula salad.
