One-Pan Sausage, Gnocchi & Butternut Squash

Ingredients

  • 1/4 butternut squash, diced
  • 150 g fresh mushrooms
  • 1 smoked sausage
  • 1/4 red onion
  • 150 g gnocchi
  • 1 pinch dried rosemary
  • 15 g parmesan shavings

Steps

  1. Preheat the oven to 200°C.
  2. Peel the red onion and cut into quarters.
  3. Wash the mushrooms and cut them in half or quarters depending on size.
  4. Peel the butternut squash if desired, cut in half lengthwise, remove seeds, and dice into small cubes.
  5. Slice the sausage into rounds.
  6. On a baking sheet, combine the gnocchi, squash, mushrooms, and onion. Drizzle with olive oil, season with salt and pepper, and sprinkle with rosemary. Toss to combine.
  7. Add the sausage slices on top of the vegetables.
  8. Bake for 25 minutes at 200°C.
  9. Remove from oven and serve topped with parmesan shavings.
