One-Pan Sausage, Gnocchi & Butternut Squash

Ingredients
- 1/4 butternut squash, diced
- 150 g fresh mushrooms
- 1 smoked sausage
- 1/4 red onion
- 150 g gnocchi
- 1 pinch dried rosemary
- 15 g parmesan shavings
Steps
- Preheat the oven to 200°C.
- Peel the red onion and cut into quarters.
- Wash the mushrooms and cut them in half or quarters depending on size.
- Peel the butternut squash if desired, cut in half lengthwise, remove seeds, and dice into small cubes.
- Slice the sausage into rounds.
- On a baking sheet, combine the gnocchi, squash, mushrooms, and onion. Drizzle with olive oil, season with salt and pepper, and sprinkle with rosemary. Toss to combine.
- Add the sausage slices on top of the vegetables.
- Bake for 25 minutes at 200°C.
- Remove from oven and serve topped with parmesan shavings.
