Mexican Bowl

Ingredients

  • 1 chicken breast (escalope)
  • 1 tsp Mexican spice mix
  • 1/2 avocado
  • 50 g corn, canned
  • 50 g red kidney beans, cooked
  • 70 g rice
  • fresh cilantro leaves, a few

Steps

  1. Cook the rice in boiling salted water according to package instructions.
  2. Heat a drizzle of olive oil in a pan over medium heat. Add the chicken, season with salt, pepper, and Mexican spice mix. Cook 4-5 minutes per side until golden.
  3. Serve the rice with the chicken, drained corn, drained kidney beans, and diced avocado.
  4. Adjust seasoning to taste and top with a few cilantro leaves.
