Ingredients
- 1 chicken breast (escalope)
- 1 tsp Mexican spice mix
- 1/2 avocado
- 50 g corn, canned
- 50 g red kidney beans, cooked
- 70 g rice
- fresh cilantro leaves, a few
Steps
- Cook the rice in boiling salted water according to package instructions.
- Heat a drizzle of olive oil in a pan over medium heat. Add the chicken, season with salt, pepper, and Mexican spice mix. Cook 4-5 minutes per side until golden.
- Serve the rice with the chicken, drained corn, drained kidney beans, and diced avocado.
- Adjust seasoning to taste and top with a few cilantro leaves.
