Homemade Omelette with Greek Salad

Ingredients

  • 2 eggs
  • 100 g cucumber
  • 100 g cherry tomatoes
  • 20 g feta cheese
  • 10 g black olives, pitted
  • 25 g red onion
  • 1 pinch dried oregano
  • olive oil
  • salt
  • pepper

Steps

  1. Wash and halve the cherry tomatoes.
  2. Wash and dice the cucumber finely.
  3. Peel and thinly slice the red onion.
  4. Drain and roughly chop the black olives.
  5. In a bowl, combine the tomatoes, cucumber, onion, olives, crumbled feta, and oregano. Season with salt and pepper, and add a drizzle of olive oil. Set aside.
  6. In a second bowl, beat the eggs with salt, pepper, and a pinch of oregano if available.
  7. Heat a drizzle of olive oil in a pan over medium heat. Pour in the eggs and cook for 3-4 minutes until the bottom is golden.
  8. Add a few spoonfuls of the Greek salad onto the omelette, then fold it in half.
  9. Serve the omelette with the remaining Greek salad on the side. Adjust seasoning to taste and serve.
