Homemade Omelette with Greek Salad

Ingredients
- 2 eggs
- 100 g cucumber
- 100 g cherry tomatoes
- 20 g feta cheese
- 10 g black olives, pitted
- 25 g red onion
- 1 pinch dried oregano
- olive oil
- salt
- pepper
Steps
- Wash and halve the cherry tomatoes.
- Wash and dice the cucumber finely.
- Peel and thinly slice the red onion.
- Drain and roughly chop the black olives.
- In a bowl, combine the tomatoes, cucumber, onion, olives, crumbled feta, and oregano. Season with salt and pepper, and add a drizzle of olive oil. Set aside.
- In a second bowl, beat the eggs with salt, pepper, and a pinch of oregano if available.
- Heat a drizzle of olive oil in a pan over medium heat. Pour in the eggs and cook for 3-4 minutes until the bottom is golden.
- Add a few spoonfuls of the Greek salad onto the omelette, then fold it in half.
- Serve the omelette with the remaining Greek salad on the side. Adjust seasoning to taste and serve.
