Stir-Fried Noodles with Vegetables and Eggs

Ingredients
- 60 g Chinese egg noodles
- 70 g fresh button mushrooms
- 80 g fresh green beans
- 2 tbsp soy sauce
- 1/4 clove garlic
- 1 egg
Steps
- Cook the noodles in boiling water according to package instructions, then drain.
- Meanwhile, wash and slice the mushrooms.
- Heat a drizzle of olive oil in a pan over medium heat. Add the mushrooms, green beans, and grated garlic. Stir, then add a small splash of water. Cover and cook for 10–12 minutes.
- Meanwhile, crack the eggs into a bowl, season with salt and pepper, and beat well.
- Check the vegetables are cooked, then push them to one side of the pan. Add a little oil and pour in the eggs. Cook for 1 minute, then scramble with a spatula and mix into the vegetables.
- Add the noodles and soy sauce. Mix well and cook for another 1–2 minutes over high heat.
- Serve the stir-fried noodles in a bowl, topped with fresh cilantro leaves. Adjust seasoning to taste.
Notes
Garnish with fresh cilantro before serving.
