Stir-Fried Noodles with Vegetables and Eggs

Ingredients

  • 60 g Chinese egg noodles
  • 70 g fresh button mushrooms
  • 80 g fresh green beans
  • 2 tbsp soy sauce
  • 1/4 clove garlic
  • 1 egg

Steps

  1. Cook the noodles in boiling water according to package instructions, then drain.
  2. Meanwhile, wash and slice the mushrooms.
  3. Heat a drizzle of olive oil in a pan over medium heat. Add the mushrooms, green beans, and grated garlic. Stir, then add a small splash of water. Cover and cook for 10–12 minutes.
  4. Meanwhile, crack the eggs into a bowl, season with salt and pepper, and beat well.
  5. Check the vegetables are cooked, then push them to one side of the pan. Add a little oil and pour in the eggs. Cook for 1 minute, then scramble with a spatula and mix into the vegetables.
  6. Add the noodles and soy sauce. Mix well and cook for another 1–2 minutes over high heat.
  7. Serve the stir-fried noodles in a bowl, topped with fresh cilantro leaves. Adjust seasoning to taste.

Notes

Garnish with fresh cilantro before serving.
