Chicken Curry

Ingredients

  • 1 chicken breast, cut into pieces
  • 1/4 tsp curry powder
  • 2 tbsp coconut milk
  • 70 g rice
  • 1/2 bunch fresh cilantro

Steps

  1. Cook the rice in a large pot of boiling water according to package instructions.
  2. Cut the chicken breast into pieces.
  3. Heat a drizzle of olive oil in a pan and sauté the chicken for 2 minutes; season with salt and pepper.
  4. Once golden, add the curry powder and cook for 2 more minutes over medium heat.
  5. Pour in the coconut milk, cover, and cook for 5 minutes.
  6. Serve the curry over the rice, optionally garnished with fresh cilantro.
