Chicken Curry

Ingredients
- 1 chicken breast, cut into pieces
- 1/4 tsp curry powder
- 2 tbsp coconut milk
- 70 g rice
- 1/2 bunch fresh cilantro
Steps
- Cook the rice in a large pot of boiling water according to package instructions.
- Cut the chicken breast into pieces.
- Heat a drizzle of olive oil in a pan and sauté the chicken for 2 minutes; season with salt and pepper.
- Once golden, add the curry powder and cook for 2 more minutes over medium heat.
- Pour in the coconut milk, cover, and cook for 5 minutes.
- Serve the curry over the rice, optionally garnished with fresh cilantro.
