Poor Man's Burrito Bowls

Ingredients

  • 2 cups uncooked long grain white rice
  • 1/2 tsp salt
  • 2 (15 oz) cans black beans
  • 1/2 tsp ground cumin
  • 1/4 tsp garlic powder
  • 1 (16 oz) jar salsa
  • 6 oz shredded cheese
  • 1 bunch green onions
  • 1 jalapeño, sliced (optional)

Steps

  1. Combine rice, salt, and 3 cups water in a medium pot. Bring to a boil, then reduce heat to low, cover, and simmer 15 minutes.
  2. Turn off heat and let rice sit covered for 5 more minutes, then fluff with a fork.
  3. While rice cooks, add undrained black beans, cumin, and garlic powder to a small pot. Heat over medium, stirring often, until warmed through.
  4. Slice the green onions and jalapeño, if using.
  5. Assemble bowls with 1 cup rice, 1/2 cup beans, 1/3 cup salsa, and 1 oz shredded cheese each.
  6. Top with sliced green onions and jalapeño, then serve.
