Gougères au Comté (Cheese Puffs)

Ingredients

  • 80 g butter
  • 200 g flour
  • water
  • 3 eggs
  • 1 pinch salt
  • 1 pinch pepper
  • 150 g Comté cheese, grated

Steps

  1. Preheat oven to 180°C (350°F).
  2. In a pot, combine butter and water; heat until butter melts and mixture boils.
  3. Add flour, salt, and pepper; stir vigorously until the dough forms a ball and pulls away from the sides.
  4. Remove from heat and let cool slightly, then beat in eggs one at a time until fully incorporated and smooth.
  5. Stir in the grated Comté cheese.
  6. Transfer the dough to a piping bag and pipe small mounds (about 2-3 cm) onto a baking sheet lined with parchment paper.
  7. Bake for 20-30 minutes, until puffed and golden brown.
