Gougères au Comté (Cheese Puffs)

Ingredients
- 80 g butter
- 200 g flour
- water
- 3 eggs
- 1 pinch salt
- 1 pinch pepper
- 150 g Comté cheese, grated
Steps
- Preheat oven to 180°C (350°F).
- In a pot, combine butter and water; heat until butter melts and mixture boils.
- Add flour, salt, and pepper; stir vigorously until the dough forms a ball and pulls away from the sides.
- Remove from heat and let cool slightly, then beat in eggs one at a time until fully incorporated and smooth.
- Stir in the grated Comté cheese.
- Transfer the dough to a piping bag and pipe small mounds (about 2-3 cm) onto a baking sheet lined with parchment paper.
- Bake for 20-30 minutes, until puffed and golden brown.
