Burrito Bowl Meal Prep

Ingredients

  • 4 cups cooked rice
  • 1 lb ground turkey or beef
  • taco seasoning
  • 1 cup frozen corn kernels
  • 1 (15 oz) can black beans
  • 4 oz cheese, shredded (about 1 cup)
  • 1 1/3 cups salsa
  • 2 green onions, sliced

Steps

  1. Cook the rice according to package directions (about 1.5 cups uncooked rice and 2.5 cups water yields 4 cups cooked rice).
  2. While the rice cooks, brown the ground turkey or beef in a skillet over medium heat until fully cooked, adding a little oil if needed.
  3. Add taco seasoning and 1/2 cup water to the cooked meat. Simmer, stirring occasionally, until the liquid reduces to a saucy consistency, about 5 minutes. Remove from heat.
  4. Thaw the corn, rinse and drain the black beans, shred the cheese, and slice the green onions.
  5. Fluff the cooked rice with a fork and divide it evenly among four containers.
  6. Divide the taco meat, corn, black beans, cheese, salsa, and green onions evenly among the containers.
  7. Before eating, reheat the bowls for 1-2 minutes to melt the cheese and warm the meat and rice.
