Burrito Bowl Meal Prep

Ingredients
- 4 cups cooked rice
- 1 lb ground turkey or beef
- taco seasoning
- 1 cup frozen corn kernels
- 1 (15 oz) can black beans
- 4 oz cheese, shredded (about 1 cup)
- 1 1/3 cups salsa
- 2 green onions, sliced
Steps
- Cook the rice according to package directions (about 1.5 cups uncooked rice and 2.5 cups water yields 4 cups cooked rice).
- While the rice cooks, brown the ground turkey or beef in a skillet over medium heat until fully cooked, adding a little oil if needed.
- Add taco seasoning and 1/2 cup water to the cooked meat. Simmer, stirring occasionally, until the liquid reduces to a saucy consistency, about 5 minutes. Remove from heat.
- Thaw the corn, rinse and drain the black beans, shred the cheese, and slice the green onions.
- Fluff the cooked rice with a fork and divide it evenly among four containers.
- Divide the taco meat, corn, black beans, cheese, salsa, and green onions evenly among the containers.
- Before eating, reheat the bowls for 1-2 minutes to melt the cheese and warm the meat and rice.
