Quiche with Bacon and Cheese

Ingredients

  • 1 shortcrust pastry
  • 3 eggs
  • 200 ml crème fraîche
  • 200 g smoked bacon lardons
  • 100 g grated cheese
  • salt
  • pepper
  • nutmeg (optional)

Steps

  1. Let all ingredients come to room temperature.
  2. Roll out the pastry into a pie dish lined with parchment paper, prick with a fork, and chill in the fridge.
  3. Grate the cheese if needed and crack the eggs into a bowl.
  4. Whisk the eggs with the crème fraîche until smooth. Season with salt, pepper, and a pinch of nutmeg if desired. Optionally add chopped herbs like chives or parsley.
  5. Cook the bacon lardons in a dry skillet for about 5 minutes until golden. Drain on paper towels to remove excess fat.
  6. Preheat the oven to 180°C (350°F).
  7. Spread the bacon over the pastry base, then pour the egg mixture on top.
  8. Sprinkle generously with grated cheese.
  9. Bake for about 35 minutes, until golden and slightly puffed.
  10. Let cool slightly before unmolding and serving.
