Quiche with Bacon and Cheese

Ingredients
- 1 shortcrust pastry
- 3 eggs
- 200 ml crème fraîche
- 200 g smoked bacon lardons
- 100 g grated cheese
- salt
- pepper
- nutmeg (optional)
Steps
- Let all ingredients come to room temperature.
- Roll out the pastry into a pie dish lined with parchment paper, prick with a fork, and chill in the fridge.
- Grate the cheese if needed and crack the eggs into a bowl.
- Whisk the eggs with the crème fraîche until smooth. Season with salt, pepper, and a pinch of nutmeg if desired. Optionally add chopped herbs like chives or parsley.
- Cook the bacon lardons in a dry skillet for about 5 minutes until golden. Drain on paper towels to remove excess fat.
- Preheat the oven to 180°C (350°F).
- Spread the bacon over the pastry base, then pour the egg mixture on top.
- Sprinkle generously with grated cheese.
- Bake for about 35 minutes, until golden and slightly puffed.
- Let cool slightly before unmolding and serving.
