Butternut Squash Soup

Ingredients
- 1 butternut squash
- 1 onion
- 1 bouillon cube
- 2 tbsp olive oil
- 1 tbsp crème fraîche
- 1 pinch nutmeg
- 1 pinch cumin
- 1 pinch salt
Steps
- Peel the squash and cut into 1 cm thick slices. Remove seeds and dice into 4 cm cubes. Peel and finely chop the onion.
- Heat the oil in a pot and sauté the onion until golden. Add the squash cubes and simmer over medium heat for 10 minutes.
- Add the crumbled bouillon cube, salt, nutmeg, and cumin. Add water to cover. Cover the pot and simmer for 50 minutes over medium heat.
- Blend the soup with an immersion blender until smooth and creamy. Stir in the crème fraîche and blend again briefly. Adjust seasoning if needed.
- Serve hot in deep bowls.
