Butternut Squash Soup

Ingredients

  • 1 butternut squash
  • 1 onion
  • 1 bouillon cube
  • 2 tbsp olive oil
  • 1 tbsp crème fraîche
  • 1 pinch nutmeg
  • 1 pinch cumin
  • 1 pinch salt

Steps

  1. Peel the squash and cut into 1 cm thick slices. Remove seeds and dice into 4 cm cubes. Peel and finely chop the onion.
  2. Heat the oil in a pot and sauté the onion until golden. Add the squash cubes and simmer over medium heat for 10 minutes.
  3. Add the crumbled bouillon cube, salt, nutmeg, and cumin. Add water to cover. Cover the pot and simmer for 50 minutes over medium heat.
  4. Blend the soup with an immersion blender until smooth and creamy. Stir in the crème fraîche and blend again briefly. Adjust seasoning if needed.
  5. Serve hot in deep bowls.
