Gnocchi Skillet with Vegetables and Mozzarella

Ingredients
- 400 g gnocchi (fresh, refrigerated)
- 1 shallot
- 1 zucchini
- 300 g mixed cherry tomatoes (red and yellow)
- 3 tbsp olive oil
- 1 clove garlic
- 2 tbsp pitted black olives
- Salt and pepper
- Chili flakes, to taste
- 200 g burrata or mozzarella
- A handful of basil leaves
Steps
- Preheat the oven to 180°C (fan/convection).
- Peel and finely chop the shallot and garlic. Quarter the zucchini lengthwise, then slice thinly. Wash and halve the cherry tomatoes, and halve the olives.
- Heat the olive oil in a large ovenproof, non-stick skillet. Sauté the shallot, garlic, and zucchini over medium heat for 4-5 minutes.
- Add the gnocchi and cook for another 5-7 minutes, stirring occasionally, until golden brown.
- Add the cherry tomatoes and olives. Season generously with salt, pepper, and chili flakes to taste.
- Tear the burrata or mozzarella into pieces and scatter over the gnocchi and vegetables. Transfer the skillet to the preheated oven and bake for 5-7 minutes, until the cheese has slightly melted.
- Wash and dry the basil, then scatter over the dish before serving.
