Gnocchi Skillet with Vegetables and Mozzarella

Ingredients

  • 400 g gnocchi (fresh, refrigerated)
  • 1 shallot
  • 1 zucchini
  • 300 g mixed cherry tomatoes (red and yellow)
  • 3 tbsp olive oil
  • 1 clove garlic
  • 2 tbsp pitted black olives
  • Salt and pepper
  • Chili flakes, to taste
  • 200 g burrata or mozzarella
  • A handful of basil leaves

Steps

  1. Preheat the oven to 180°C (fan/convection).
  2. Peel and finely chop the shallot and garlic. Quarter the zucchini lengthwise, then slice thinly. Wash and halve the cherry tomatoes, and halve the olives.
  3. Heat the olive oil in a large ovenproof, non-stick skillet. Sauté the shallot, garlic, and zucchini over medium heat for 4-5 minutes.
  4. Add the gnocchi and cook for another 5-7 minutes, stirring occasionally, until golden brown.
  5. Add the cherry tomatoes and olives. Season generously with salt, pepper, and chili flakes to taste.
  6. Tear the burrata or mozzarella into pieces and scatter over the gnocchi and vegetables. Transfer the skillet to the preheated oven and bake for 5-7 minutes, until the cheese has slightly melted.
  7. Wash and dry the basil, then scatter over the dish before serving.
