Asian Cucumber Salad

Ingredients

  • 500 g mini cucumbers
  • 1/2 tsp salt
  • 2-3 tbsp cilantro, finely chopped
  • 1 tbsp sesame seeds
  • 2 tbsp roasted, salted peanuts
  • 1 tsp ginger, peeled and finely grated
  • 1/2 lime, juice and zest
  • 30 ml rice vinegar
  • 1 tbsp coconut aminos
  • 1 tbsp maple syrup
  • 1 tbsp sesame oil
  • 1 pinch chili flakes

Steps

  1. Wash cucumbers, slice thinly, sprinkle with salt, and let sit for a few minutes to draw out excess liquid.
  2. In a bowl, whisk together rice vinegar, coconut aminos, maple syrup, sesame oil, lime juice, lime zest, grated ginger, and chili flakes to make the dressing.
  3. Drain the cucumbers and toss with the dressing.
  4. Top the salad with chopped cilantro, sesame seeds, and peanuts before serving.
