Asian Cucumber Salad

Ingredients
- 500 g mini cucumbers
- 1/2 tsp salt
- 2-3 tbsp cilantro, finely chopped
- 1 tbsp sesame seeds
- 2 tbsp roasted, salted peanuts
- 1 tsp ginger, peeled and finely grated
- 1/2 lime, juice and zest
- 30 ml rice vinegar
- 1 tbsp coconut aminos
- 1 tbsp maple syrup
- 1 tbsp sesame oil
- 1 pinch chili flakes
Steps
- Wash cucumbers, slice thinly, sprinkle with salt, and let sit for a few minutes to draw out excess liquid.
- In a bowl, whisk together rice vinegar, coconut aminos, maple syrup, sesame oil, lime juice, lime zest, grated ginger, and chili flakes to make the dressing.
- Drain the cucumbers and toss with the dressing.
- Top the salad with chopped cilantro, sesame seeds, and peanuts before serving.
