Radish Greens Gratin

Ingredients
- 1 bunch radish greens
- 250 ml milk
- 100 g bacon lardons
- 100 g grated cheese
- 1 onion
- 0.5 tbsp flour
- 0.5 tbsp butter
- Salt, pepper
Steps
- Wash the radish greens and boil them in salted water for 5 minutes. Drain and set aside.
- Chop the onion and sauté it with the bacon lardons in a pan. Set aside.
- Make a béchamel sauce: melt the butter in a saucepan, add the flour, and stir constantly for a few minutes. Gradually add the milk while whisking to avoid lumps. Bring to a boil, then remove from heat. Stir in the grated cheese until melted.
- In a baking dish, layer the radish greens, the onion and lardon mixture, and the béchamel sauce. Top with more grated cheese.
- Bake at 220°C (425°F) for 20 minutes.
