Radish Greens Gratin

Ingredients

  • 1 bunch radish greens
  • 250 ml milk
  • 100 g bacon lardons
  • 100 g grated cheese
  • 1 onion
  • 0.5 tbsp flour
  • 0.5 tbsp butter
  • Salt, pepper

Steps

  1. Wash the radish greens and boil them in salted water for 5 minutes. Drain and set aside.
  2. Chop the onion and sauté it with the bacon lardons in a pan. Set aside.
  3. Make a béchamel sauce: melt the butter in a saucepan, add the flour, and stir constantly for a few minutes. Gradually add the milk while whisking to avoid lumps. Bring to a boil, then remove from heat. Stir in the grated cheese until melted.
  4. In a baking dish, layer the radish greens, the onion and lardon mixture, and the béchamel sauce. Top with more grated cheese.
  5. Bake at 220°C (425°F) for 20 minutes.
