Gazpacho aux tomates et cerises au thym

Ingredients
- 1 kg tomatoes
- 1 kg cherries
- 0.5 onion
- 20 g red bell pepper
- 1 clove garlic
- 150 g stale bread
- 8 cl olive oil
- 6 cl sherry vinegar
- 4 sprigs thyme
- salt and pepper
Steps
- Soak the stale bread in a bowl of water for 10 minutes until softened.
- Wash, stem, and pit the cherries.
- Peel and finely chop the onion and garlic.
- Wash, seed, and finely chop the red bell pepper.
- Wash, seed, and cut the tomatoes into pieces.
- Blend the tomatoes, cherries, onion, garlic, bell pepper, and drained bread together until smooth (reserve the thyme sprigs for garnish).
- Adjust seasoning with salt and pepper as needed.
- Pour into small glasses and chill.
- Garnish each glass with a whole cherry and a sprig of thyme before serving cold.
