Gazpacho aux tomates et cerises au thym

Ingredients

  • 1 kg tomatoes
  • 1 kg cherries
  • 0.5 onion
  • 20 g red bell pepper
  • 1 clove garlic
  • 150 g stale bread
  • 8 cl olive oil
  • 6 cl sherry vinegar
  • 4 sprigs thyme
  • salt and pepper

Steps

  1. Soak the stale bread in a bowl of water for 10 minutes until softened.
  2. Wash, stem, and pit the cherries.
  3. Peel and finely chop the onion and garlic.
  4. Wash, seed, and finely chop the red bell pepper.
  5. Wash, seed, and cut the tomatoes into pieces.
  6. Blend the tomatoes, cherries, onion, garlic, bell pepper, and drained bread together until smooth (reserve the thyme sprigs for garnish).
  7. Adjust seasoning with salt and pepper as needed.
  8. Pour into small glasses and chill.
  9. Garnish each glass with a whole cherry and a sprig of thyme before serving cold.
