Concombres à la crème

Ingredients
- 2 cucumbers
- 1 plain yogurt
- 2 fresh cheese (like fromage frais)
- 1 lemon
- 2 tbsp thick crème fraîche
- 1 tbsp olive oil
- Salt, pepper
- Mint leaves, for decoration
Steps
- Rinse, dry, and grate the cucumbers into thin strips using a mandoline or coarse grater. Place in a serving bowl.
- In a separate bowl, whisk together olive oil, lemon juice, crème fraîche, yogurt, salt, and pepper.
- Pour the sauce over the cucumbers.
- Cut the fresh cheese into small cubes and add to the bowl.
- Garnish with mint leaves before serving.
