Concombres à la crème

Ingredients

  • 2 cucumbers
  • 1 plain yogurt
  • 2 fresh cheese (like fromage frais)
  • 1 lemon
  • 2 tbsp thick crème fraîche
  • 1 tbsp olive oil
  • Salt, pepper
  • Mint leaves, for decoration

Steps

  1. Rinse, dry, and grate the cucumbers into thin strips using a mandoline or coarse grater. Place in a serving bowl.
  2. In a separate bowl, whisk together olive oil, lemon juice, crème fraîche, yogurt, salt, and pepper.
  3. Pour the sauce over the cucumbers.
  4. Cut the fresh cheese into small cubes and add to the bowl.
  5. Garnish with mint leaves before serving.
