Mediterranean Turkey Bowls

Ingredients
- 1 cup plain full-fat yogurt
- 1 Tbsp lemon juice
- ¼ tsp garlic powder
- ¼ tsp dried dill
- ¼ tsp salt
- 1 Tbsp olive oil
- 1 lb ground turkey
- 2 cloves garlic, minced
- ½ tsp dried oregano
- ½ tsp salt
- ¼ tsp cracked pepper
- 1 cup uncooked rice
- 1 pint grape tomatoes
- 1 cucumber
- ¼ red onion
- ¼ cup chopped parsley
Steps
- Stir together yogurt, lemon juice, garlic powder, dill, salt, and pepper in a bowl to make the sauce. Refrigerate until ready to serve.
- Cook the rice according to package instructions.
- Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until almost done.
- Add minced garlic, oregano, salt, and pepper to the turkey. Stir and cook 2-3 minutes more until turkey is fully cooked. Remove from heat.
- Slice tomatoes in half, chop cucumber into quarter-rounds, thinly slice red onion, and chop parsley.
- Divide rice, turkey, tomatoes, cucumber, red onion, and parsley among four bowls. Drizzle with yogurt sauce before serving.
