Mediterranean Turkey Bowls

Ingredients

  • 1 cup plain full-fat yogurt
  • 1 Tbsp lemon juice
  • ¼ tsp garlic powder
  • ¼ tsp dried dill
  • ¼ tsp salt
  • 1 Tbsp olive oil
  • 1 lb ground turkey
  • 2 cloves garlic, minced
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp cracked pepper
  • 1 cup uncooked rice
  • 1 pint grape tomatoes
  • 1 cucumber
  • ¼ red onion
  • ¼ cup chopped parsley

Steps

  1. Stir together yogurt, lemon juice, garlic powder, dill, salt, and pepper in a bowl to make the sauce. Refrigerate until ready to serve.
  2. Cook the rice according to package instructions.
  3. Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until almost done.
  4. Add minced garlic, oregano, salt, and pepper to the turkey. Stir and cook 2-3 minutes more until turkey is fully cooked. Remove from heat.
  5. Slice tomatoes in half, chop cucumber into quarter-rounds, thinly slice red onion, and chop parsley.
  6. Divide rice, turkey, tomatoes, cucumber, red onion, and parsley among four bowls. Drizzle with yogurt sauce before serving.
