Roasted Pepper Salad

Ingredients

  • 3 bell peppers (red, yellow, green)
  • 1 splash balsamic vinegar
  • 1 shallot, chopped
  • Olive oil
  • Salt and pepper

Steps

  1. Preheat the oven to 210°C (400°F).
  2. Cut the peppers in half and remove the seeds and core.
  3. Place peppers skin-side up on a baking tray and drizzle with olive oil.
  4. Roast for 30 minutes.
  5. Cover with aluminum foil and roast for another 10 minutes.
  6. Remove from oven and let cool, then peel off the skins.
  7. Slice peppers into strips and toss with olive oil, balsamic vinegar, and chopped shallot.
  8. Season with salt and pepper, then serve.
