Roasted Pepper Salad

Ingredients
- 3 bell peppers (red, yellow, green)
- 1 splash balsamic vinegar
- 1 shallot, chopped
- Olive oil
- Salt and pepper
Steps
- Preheat the oven to 210°C (400°F).
- Cut the peppers in half and remove the seeds and core.
- Place peppers skin-side up on a baking tray and drizzle with olive oil.
- Roast for 30 minutes.
- Cover with aluminum foil and roast for another 10 minutes.
- Remove from oven and let cool, then peel off the skins.
- Slice peppers into strips and toss with olive oil, balsamic vinegar, and chopped shallot.
- Season with salt and pepper, then serve.
