3 Quick Recipes from One Corn and Green Bean Base

Ingredients
- Extra-fine green beans
- Sweet corn kernels, no added sugar
- 1 garlic clove
- Salt, pepper
- Olive oil
- 100 g rice
- 50 g red kidney beans
- 2 tbsp sesame seeds
- 2 sprigs flat-leaf parsley
- 1 tbsp smoked paprika
- 1 burrata
- Whole wheat bread
- 1 shortcrust pastry
- 1/2 chorizo
- 4 eggs
- 20 cl heavy cream
- 20 cl milk
Steps
- Drain the green beans and corn. Sauté garlic and vegetables in a hot pan with olive oil, then season with salt and pepper.
- For the veggie bowl: mix a portion of the corn and bean base with cooked rice, some red kidney beans, and a pinch of sesame seeds.
- For the bruschetta: mash a portion of the base with a little chili, then mix in chopped herbs. Spread over a toasted slice of bread and top with creamy burrata.
- For the savory quiche: roughly chop the remaining base. Beat 2 whole eggs and 2 egg yolks with the milk and cream, then stir in diced chorizo and the chopped base.
- Pour the mixture into the shortcrust pastry shell and bake for 30 minutes.
Notes
One base of sautéed green beans and sweet corn is used to create three different quick dishes: a rice and bean bowl, a burrata bruschetta, and a chorizo quiche.
