Bibimbap Bowl

Ingredients

  • 4 cups cooked jasmine rice
  • ½ tbsp cooking oil
  • 6 cups fresh spinach
  • 1 tsp toasted sesame oil
  • ¼ tsp salt
  • ½ lb ground beef
  • 2 tbsp chili garlic sauce
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 carrot, grated
  • 1 English cucumber, sliced
  • 2 green onions, sliced
  • 4 large eggs
  • ¼ cup kimchi
  • 1 tbsp sesame seeds

Steps

  1. Cook the rice if not already prepared; you will need 4 cups cooked rice.
  2. Heat cooking oil in a large skillet over medium heat. Add spinach and sauté a few minutes until wilted. Drizzle with sesame oil, season with salt, and remove to a bowl.
  3. In the same skillet, cook the ground beef until browned. Drain excess grease.
  4. Add chili garlic sauce, soy sauce, and brown sugar to the beef. Stir and cook about 1 minute until evenly coated. Remove from heat.
  5. Peel and grate the carrot. Thinly slice the cucumber and green onions.
  6. Fry or soft boil the eggs.
  7. Assemble bowls with rice, spinach, beef, cucumber, carrot, an egg, and kimchi. Top with green onions and sesame seeds.

Notes
