Bibimbap Bowl

Ingredients
- 4 cups cooked jasmine rice
- ½ tbsp cooking oil
- 6 cups fresh spinach
- 1 tsp toasted sesame oil
- ¼ tsp salt
- ½ lb ground beef
- 2 tbsp chili garlic sauce
- 1 tbsp soy sauce
- 1 tbsp brown sugar
- 1 carrot, grated
- 1 English cucumber, sliced
- 2 green onions, sliced
- 4 large eggs
- ¼ cup kimchi
- 1 tbsp sesame seeds
Steps
- Cook the rice if not already prepared; you will need 4 cups cooked rice.
- Heat cooking oil in a large skillet over medium heat. Add spinach and sauté a few minutes until wilted. Drizzle with sesame oil, season with salt, and remove to a bowl.
- In the same skillet, cook the ground beef until browned. Drain excess grease.
- Add chili garlic sauce, soy sauce, and brown sugar to the beef. Stir and cook about 1 minute until evenly coated. Remove from heat.
- Peel and grate the carrot. Thinly slice the cucumber and green onions.
- Fry or soft boil the eggs.
- Assemble bowls with rice, spinach, beef, cucumber, carrot, an egg, and kimchi. Top with green onions and sesame seeds.
Notes
