Caesar Sauce

Ingredients
- 2 egg yolks
- 100 g anchovies in oil
- 40 g parmesan cheese, grated
- 2 garlic cloves
- 5 cl vinegar
- 10 cl olive oil
- 30 cl heavy cream
- 6 pinches Espelette pepper
Steps
- Peel, rinse, and chop the garlic cloves. Grate the parmesan.
- Blend the egg yolks, anchovies, and Espelette pepper together.
- Add the olive oil while continuing to blend.
- Add the vinegar and parmesan, blending until smooth.
- Stir in the cream and mix well.
