Caesar Sauce

Ingredients

  • 2 egg yolks
  • 100 g anchovies in oil
  • 40 g parmesan cheese, grated
  • 2 garlic cloves
  • 5 cl vinegar
  • 10 cl olive oil
  • 30 cl heavy cream
  • 6 pinches Espelette pepper

Steps

  1. Peel, rinse, and chop the garlic cloves. Grate the parmesan.
  2. Blend the egg yolks, anchovies, and Espelette pepper together.
  3. Add the olive oil while continuing to blend.
  4. Add the vinegar and parmesan, blending until smooth.
  5. Stir in the cream and mix well.
