Tomato, Mustard and Herbes de Provence Tart

Ingredients
- 1 sheet puff pastry
- 5 tomatoes
- 30 g grated Parmesan
- 1 tbsp mustard
- 1 tsp herbes de Provence
- Salt and pepper
Steps
- Preheat oven to 210°C (410°F).
- Line a tart pan with the puff pastry, keeping the parchment paper underneath for easy unmolding.
- Spread the mustard over the pastry base.
- Slice the tomatoes into rounds and arrange them in overlapping circles over the mustard.
- Sprinkle with grated Parmesan and herbes de Provence, then season with salt and pepper.
- Bake for about 30 minutes.
- Let cool for a few minutes, then unmold and serve warm or cold.
