Tomato, Mustard and Herbes de Provence Tart

Ingredients

  • 1 sheet puff pastry
  • 5 tomatoes
  • 30 g grated Parmesan
  • 1 tbsp mustard
  • 1 tsp herbes de Provence
  • Salt and pepper

Steps

  1. Preheat oven to 210°C (410°F).
  2. Line a tart pan with the puff pastry, keeping the parchment paper underneath for easy unmolding.
  3. Spread the mustard over the pastry base.
  4. Slice the tomatoes into rounds and arrange them in overlapping circles over the mustard.
  5. Sprinkle with grated Parmesan and herbes de Provence, then season with salt and pepper.
  6. Bake for about 30 minutes.
  7. Let cool for a few minutes, then unmold and serve warm or cold.
