Easy Homemade Taboulé

Ingredients
- 200 g couscous (medium grain)
- 200 g tomatoes
- 1 onion
- 1 cucumber
- 1 lemon
- 4 tbsp olive oil
- 1 tbsp fresh mint
- 1/2 tsp salt
- 1 pinch pepper
Steps
- Pour the couscous into a large bowl and cover with cold water or broth. Let it swell for 30 minutes, stirring occasionally to fluff the grains.
- Wash the tomatoes, remove seeds, and dice them. Peel the cucumber and dice it as well. Peel and finely slice the onion.
- Once the couscous has absorbed all the water, add the lemon juice and fluff with a fork to separate the grains.
- Add the diced tomatoes and cucumber, chopped mint, and olive oil. Season with salt and pepper, mix well, and refrigerate for 2 hours before serving.
