Easy Homemade Taboulé

Ingredients

  • 200 g couscous (medium grain)
  • 200 g tomatoes
  • 1 onion
  • 1 cucumber
  • 1 lemon
  • 4 tbsp olive oil
  • 1 tbsp fresh mint
  • 1/2 tsp salt
  • 1 pinch pepper

Steps

  1. Pour the couscous into a large bowl and cover with cold water or broth. Let it swell for 30 minutes, stirring occasionally to fluff the grains.
  2. Wash the tomatoes, remove seeds, and dice them. Peel the cucumber and dice it as well. Peel and finely slice the onion.
  3. Once the couscous has absorbed all the water, add the lemon juice and fluff with a fork to separate the grains.
  4. Add the diced tomatoes and cucumber, chopped mint, and olive oil. Season with salt and pepper, mix well, and refrigerate for 2 hours before serving.
