Fried Breaded Chicken (Poulet Pané Frit)

Ingredients

  • 500 g chicken tenders
  • 2 eggs
  • 4 tbsp breadcrumbs
  • 4 tbsp flour
  • 1 tbsp paprika
  • juice of 1 lemon
  • 2 tbsp sunflower oil
  • oil for frying
  • salt and freshly ground pepper

Steps

  1. Place the chicken pieces in a dish, drizzle with lemon juice, season with salt and pepper, and marinate in the fridge for 2 hours, turning occasionally.
  2. Set up three plates: one with flour, one with beaten eggs mixed with sunflower oil, and one with breadcrumbs mixed with paprika, salt, and pepper.
  3. Pat the chicken pieces dry with paper towels.
  4. Coat each piece first in flour, then in the egg mixture, then in the breadcrumb mixture.
  5. Heat frying oil in a deep fryer or skillet.
  6. Fry the chicken pieces in small batches for about 15 minutes, turning constantly with a slotted spoon.
  7. Drain fried chicken on paper towels, season with salt and pepper, and keep warm.
  8. Repeat with remaining chicken.
  9. Serve with sauces of your choice, spicy or mild.
