Fried Breaded Chicken (Poulet Pané Frit)

Ingredients
- 500 g chicken tenders
- 2 eggs
- 4 tbsp breadcrumbs
- 4 tbsp flour
- 1 tbsp paprika
- juice of 1 lemon
- 2 tbsp sunflower oil
- oil for frying
- salt and freshly ground pepper
Steps
- Place the chicken pieces in a dish, drizzle with lemon juice, season with salt and pepper, and marinate in the fridge for 2 hours, turning occasionally.
- Set up three plates: one with flour, one with beaten eggs mixed with sunflower oil, and one with breadcrumbs mixed with paprika, salt, and pepper.
- Pat the chicken pieces dry with paper towels.
- Coat each piece first in flour, then in the egg mixture, then in the breadcrumb mixture.
- Heat frying oil in a deep fryer or skillet.
- Fry the chicken pieces in small batches for about 15 minutes, turning constantly with a slotted spoon.
- Drain fried chicken on paper towels, season with salt and pepper, and keep warm.
- Repeat with remaining chicken.
- Serve with sauces of your choice, spicy or mild.
