Sauce César

Ingredients

  • 2 egg yolks
  • 100 g anchovies in oil
  • 40 g parmesan, grated
  • 2 cloves garlic, minced
  • 5 cl vinegar
  • 10 cl olive oil
  • 30 cl heavy cream
  • 6 pinches Espelette pepper

Steps

  1. Peel, rinse, and mince the garlic. Grate the parmesan.
  2. Blend the egg yolks, anchovies, and Espelette pepper together.
  3. Add the olive oil while continuing to blend.
  4. Add the vinegar and parmesan, blending until smooth.
  5. Stir in the cream and mix well.

Classic Caesar dressing, believed to have been created by Italian-American restaurateur Caesar Cardini in Tijuana, Mexico.
