Oi Muchim (Spicy Cucumber Salad)

Ingredients

  • 1 Korean cucumber or 2 Kirby cucumbers
  • 1 teaspoon salt
  • 1 tablespoon Korean red chili pepper flakes (gochugaru), less if desired
  • 1 tablespoon chopped scallion
  • 1/2 teaspoon minced garlic
  • 1 teaspoon vinegar
  • 1/2 teaspoon sugar
  • 1 teaspoon sesame seeds
  • 1 teaspoon sesame oil

Steps

  1. Thinly slice the cucumber, about 1/8 to 1/4 inch thick.
  2. Toss gently with salt and let sit for about 15 minutes.
  3. Drain the excess liquid without squeezing the cucumbers.
  4. Mix well with the remaining ingredients.
  5. Taste and adjust seasoning as needed.
