Egg Roll In A Bowl

Ingredients
- 1 cup onion, diced
- 8 oz mushrooms, finely minced
- 2 garlic cloves, minced
- 5 oz can water chestnuts, drained and chopped
- 2 green onions, sliced
- 1 Tbsp fresh ginger, grated
- 1 lb ground turkey
- 2 Tbsp vegetable oil
- 16 oz coleslaw mix
- ¼ cup soy sauce
- 1 Tbsp rice vinegar
- 2 Tbsp brown sugar
- 1 tsp sesame oil
- ½ tsp black pepper, freshly cracked
- â…› tsp red pepper flakes
Steps
- Prep all ingredients: dice the onion, mince the mushrooms, garlic, and ginger, chop the water chestnuts, and slice the green onions.
- Heat vegetable oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up, until mostly cooked through, about 8-10 minutes. Season with salt and pepper.
- Add onion, garlic, ginger, and mushrooms to the skillet. Cook 3-4 minutes, stirring often, until mushrooms soften and release their moisture.
- Stir in the coleslaw mix. Toss well and cook 6-8 minutes, until cabbage is tender but still slightly crunchy.
- In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, sesame oil, black pepper, and red pepper flakes.
- Pour the sauce into the skillet, add chopped water chestnuts, and toss to combine. Cook 2-3 minutes until warmed through and evenly coated.
- Stir in green onions just before serving. Serve as is or over rice, garnished with sesame seeds if desired.
