Galbi (Korean BBQ Beef Short Ribs)

Ingredients

  • 3-4 pounds beef short ribs, English cut
  • 1/2 cup soy sauce
  • 1/2 cup water
  • 1/4 cup sugar
  • 2 tablespoons honey
  • 1/4 cup rice wine or mirin
  • 1/4 cup grated Korean pear
  • 1/4 cup grated onion
  • 2 tablespoons minced garlic
  • 1 teaspoon minced ginger
  • 2 tablespoons sesame oil
  • 1/2 teaspoon black pepper

Steps

  1. Rinse the short ribs and drain. Trim excess fat, then butterfly the ribs so the meat is 1/4 to 1/2 inch thick.
  2. Mix all marinade ingredients together.
  3. Marinate the meat for at least 6 hours, or overnight for best results; thicker cuts need longer marinating.
  4. Preheat a charcoal or gas grill to medium-high to high heat.
  5. Grill the ribs, turning once, about 2-3 minutes per side, until nicely charred.
