Salmon Patties

Ingredients
- 3 (5 oz) cans skinless, boneless pink salmon
- 1/4 cup onion, finely diced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 large egg, lightly beaten
- 5 Tbsp plain breadcrumbs
- 1 Tbsp lemon juice
- 1/3 cup cooking oil
Steps
- Drain the canned salmon and place it in a large bowl, removing any bones or skin. Break up the salmon with a fork.
- Add the diced onion, salt, pepper, egg, breadcrumbs, and lemon juice to the bowl. Mix until well combined.
- Shape the mixture into 6-7 patties using about 3-4 tablespoons per patty.
- Heat the cooking oil in a skillet over medium heat. Cook the patties in batches, about 3 minutes per side, until golden brown. Flip gently to keep them intact.
- Rest the cooked patties on a wire rack. Serve hot with lemon wedges and desired sides.
