Salmon Patties

Ingredients

  • 3 (5 oz) cans skinless, boneless pink salmon
  • 1/4 cup onion, finely diced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 large egg, lightly beaten
  • 5 Tbsp plain breadcrumbs
  • 1 Tbsp lemon juice
  • 1/3 cup cooking oil

Steps

  1. Drain the canned salmon and place it in a large bowl, removing any bones or skin. Break up the salmon with a fork.
  2. Add the diced onion, salt, pepper, egg, breadcrumbs, and lemon juice to the bowl. Mix until well combined.
  3. Shape the mixture into 6-7 patties using about 3-4 tablespoons per patty.
  4. Heat the cooking oil in a skillet over medium heat. Cook the patties in batches, about 3 minutes per side, until golden brown. Flip gently to keep them intact.
  5. Rest the cooked patties on a wire rack. Serve hot with lemon wedges and desired sides.
