Jatjuk (Korean Pine Nut Porridge)

Ingredients

  • 1 cup short grain rice
  • 1 cup pine nuts (optional garnish, extra)
  • 3 cups water
  • salt, to taste
  • 1 jujube (daechu), for garnish, optional

Steps

  1. Rinse the rice, soak for at least 1 hour, then drain.
  2. Rinse the pine nuts under cold water. Optionally, toast them in a dry pan over medium-low heat for 3-4 minutes, shaking often, without browning.
  3. Blend the soaked rice and pine nuts with 2 cups of water until it becomes a milky liquid, about 30 seconds or longer depending on the blender.
  4. Pour the blended mixture into a pot. Rinse the blender with the remaining 1 cup of water and add it to the pot.
  5. Cook over medium heat, stirring gently but frequently along the bottom, for about 6 minutes until the mixture clumps and thickens.
  6. Reduce heat to medium-low and simmer, stirring occasionally, for 15 minutes or longer, until the clumps break down and the porridge becomes smooth and flowy. Add water in the last few minutes if needed to thin it.
  7. Season with salt just before serving, or serve salt on the side for diners to add individually.

Notes

Garnish with jujube slices or extra pine nuts if desired.
