Jamaican Curry Goat

Ingredients
- 2 ½ lb goat meat
- 2 ½ tbsp curry powder
- 2 tsp all-purpose seasoning
- 1 cube mutton stock
- 1 tsp salt
- 1 scotch bonnet pepper
- 6 pimento berries (allspice)
- 2 onions, medium
- 2 stalks scallion
- 4 garlic cloves
- 2 sprigs thyme
- ½ tbsp grated ginger
- 1 potato, medium, peeled and diced
- 4 tbsp coconut oil
- 4 cups water
Steps
- Wash the goat meat with vinegar and lime or lemon juice, then drain off excess water.
- In a large bowl, season the meat with 1½ tablespoons curry powder, salt, all-purpose seasoning, pimento berries, ginger, scotch bonnet pepper, scallion, onion, and garlic.
- Drizzle 2-3 tablespoons of oil over the meat, rub the seasoning in, and marinate for at least 2 hours, or overnight for best results.
- Heat the remaining oil in a large pot over medium heat, then add the remaining 1 tablespoon curry powder. Heat the oil without burning the curry powder.
- Add the goat meat and sear on all sides.
- Add enough water to cover the meat. Cover the pot and cook for 1.5 to 2 hours, or until the meat is tender, checking occasionally to ensure there's enough water.
- Add the potato and fresh thyme, then simmer on low heat until the potato is cooked and the sauce has thickened.
Notes
All-purpose seasoning and mutton stock cube are common Jamaican pantry staples; substitute with a general meat seasoning blend and bouillon cube if unavailable.
