Creamy Garlic Chicken

Ingredients
- 2 boneless, skinless chicken breasts (about 1.3 lbs/600g total)
- 1/2 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup all-purpose flour
- 2 Tbsp olive oil
- 2 Tbsp butter, divided
- 1 whole garlic bulb (about 8-9 cloves)
- 1 cup chicken broth
- 3/4 cup heavy cream
- 1/2 tsp garlic powder
- Salt and pepper, to taste
Steps
- Fillet each chicken breast into two thinner cutlets, or use thin-cut chicken breasts.
- Season chicken with Italian seasoning, salt, and pepper, then coat both sides with flour.
- Heat olive oil and 1 Tbsp butter in a large skillet over medium heat. Cook chicken about 4 minutes per side until golden and cooked through. Remove and keep warm.
- While chicken cooks, peel garlic cloves and smash them with the side of a knife.
- In the same skillet, melt the remaining 1 Tbsp butter over medium-low heat. Add garlic and sauté about 3 minutes, stirring frequently, until lightly browned and fragrant.
- Pour in chicken broth and heavy cream, then add garlic powder. Stir, scraping up browned bits from the pan. Simmer 8-10 minutes until sauce reduces and thickens by about half. Season with salt and pepper to taste.
- Return chicken to the skillet, spoon sauce over top, and heat through. Serve with fresh parsley if desired.
