Creamy Garlic Chicken

Ingredients

  • 2 boneless, skinless chicken breasts (about 1.3 lbs/600g total)
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup all-purpose flour
  • 2 Tbsp olive oil
  • 2 Tbsp butter, divided
  • 1 whole garlic bulb (about 8-9 cloves)
  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste

Steps

  1. Fillet each chicken breast into two thinner cutlets, or use thin-cut chicken breasts.
  2. Season chicken with Italian seasoning, salt, and pepper, then coat both sides with flour.
  3. Heat olive oil and 1 Tbsp butter in a large skillet over medium heat. Cook chicken about 4 minutes per side until golden and cooked through. Remove and keep warm.
  4. While chicken cooks, peel garlic cloves and smash them with the side of a knife.
  5. In the same skillet, melt the remaining 1 Tbsp butter over medium-low heat. Add garlic and sauté about 3 minutes, stirring frequently, until lightly browned and fragrant.
  6. Pour in chicken broth and heavy cream, then add garlic powder. Stir, scraping up browned bits from the pan. Simmer 8-10 minutes until sauce reduces and thickens by about half. Season with salt and pepper to taste.
  7. Return chicken to the skillet, spoon sauce over top, and heat through. Serve with fresh parsley if desired.
