French Almond Cake (Amandier)

Ingredients
- Zest of 1 orange
- 3/4 cup (150g) sugar
- 5 large eggs, at room temperature
- 2 1/2 cups (250g) almond flour
- 1/4 tsp salt
- 5 1/2 tbsp (80g) unsalted butter, melted and cooled
- 1/4 cup (60g) crème fraîche (or Greek yogurt, skyr, or quark)
- 1 tsp (5ml) almond extract
- 1 oz (30g) sliced almonds
- 1 tbsp icing sugar, for serving
Steps
- Preheat oven to 350°F (180°C) with a rack in the middle. Line the bottom of an 8-inch cake pan with parchment paper and grease the sides with butter.
- In a small bowl, combine sugar and orange zest, rubbing with fingers until the sugar is moist and fragrant.
- In a large bowl, whisk eggs with the orange sugar until foamy.
- Stir in almond flour and salt, then mix in melted butter, crème fraîche, and almond extract until just incorporated.
- Pour batter into the prepared pan and sprinkle sliced almonds evenly on top.
- Bake for 45 minutes, or until a toothpick inserted in the center comes out clean.
- Cool on a rack for at least 15 minutes before removing from the pan.
- Once completely cool, dust with icing sugar before serving.
