Falafel Tacos

Ingredients

  • 2 cups falafel batter (about 1 pound)
  • 8 thin pita bread loaves
  • 2 teaspoons olive oil
  • Sliced tomatoes
  • Sliced onions
  • Pickles
  • Parsley
  • Tahini sauce

Steps

  1. Heat 2 teaspoons olive oil in a large nonstick skillet over medium-high heat.
  2. Scoop 1/4 cup falafel batter onto a pita bread and spread into a thin layer.
  3. Place the pita, falafel side down, in the skillet and cook 3-4 minutes until browned.
  4. Flip and cook the other side 1-2 minutes until crisp.
  5. Remove from skillet and repeat with remaining pitas.
  6. Serve with sliced tomatoes, onions, pickles, parsley, and a drizzle of tahini sauce.
