Falafel Tacos

Ingredients
- 2 cups falafel batter (about 1 pound)
- 8 thin pita bread loaves
- 2 teaspoons olive oil
- Sliced tomatoes
- Sliced onions
- Pickles
- Parsley
- Tahini sauce
Steps
- Heat 2 teaspoons olive oil in a large nonstick skillet over medium-high heat.
- Scoop 1/4 cup falafel batter onto a pita bread and spread into a thin layer.
- Place the pita, falafel side down, in the skillet and cook 3-4 minutes until browned.
- Flip and cook the other side 1-2 minutes until crisp.
- Remove from skillet and repeat with remaining pitas.
- Serve with sliced tomatoes, onions, pickles, parsley, and a drizzle of tahini sauce.
