Red Lentil Soup

Ingredients
- 1 cup red lentils, rinsed (about 200g)
- 1 celery stalk, diced
- 1 Roma tomato, quartered
- 1 medium onion, quartered
- 1 large carrot, diced
- 1 1/2 liters boiling water or stock, divided
- 2 teaspoons salt, or to taste
- 1 teaspoon ground cumin
- 1/2 teaspoon ground black pepper
Steps
- In a deep pot, combine lentils and all vegetables.
- Add 1 liter of the boiling water or stock and bring to a boil over medium-high heat.
- Partially cover the pot and reduce heat to medium.
- Cook for 20 minutes, or until vegetables and lentils are tender.
- Blend the soup with an immersion or regular blender to your preferred consistency.
- Stir in the spices and mix well; adjust seasoning to taste.
- If the soup is too thick, add more water or stock to reach desired consistency.
