Red Lentil Soup

Ingredients

  • 1 cup red lentils, rinsed (about 200g)
  • 1 celery stalk, diced
  • 1 Roma tomato, quartered
  • 1 medium onion, quartered
  • 1 large carrot, diced
  • 1 1/2 liters boiling water or stock, divided
  • 2 teaspoons salt, or to taste
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground black pepper

Steps

  1. In a deep pot, combine lentils and all vegetables.
  2. Add 1 liter of the boiling water or stock and bring to a boil over medium-high heat.
  3. Partially cover the pot and reduce heat to medium.
  4. Cook for 20 minutes, or until vegetables and lentils are tender.
  5. Blend the soup with an immersion or regular blender to your preferred consistency.
  6. Stir in the spices and mix well; adjust seasoning to taste.
  7. If the soup is too thick, add more water or stock to reach desired consistency.
