Old Fashioned Tuna Noodle Casserole

Ingredients

  • 12 oz egg noodles
  • 2 (5 oz) cans tuna, drained
  • 2 cups shredded cheddar cheese
  • 3/4 cup frozen peas
  • 5 tablespoons butter
  • 8 oz sliced fresh mushrooms
  • 7 tablespoons all-purpose flour
  • 5 cups milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • salt and pepper, to taste
  • 2 tablespoons butter, melted
  • 3/4 cup panko breadcrumbs

Steps

  1. Preheat oven to 350°F.
  2. Grease a 13x9 inch baking dish with oil.
  3. Cook egg noodles in salted boiling water until al dente, about 1 minute less than package directions. Drain and set aside.
  4. Drain tuna and break apart with a fork in a small bowl.
  5. In a separate bowl, combine panko breadcrumbs with melted butter and set aside.
  6. In a large pot, melt 5 tablespoons butter over medium heat and sauté mushrooms until softened.
  7. Stir in flour and cook for 1-2 minutes to form a roux.
  8. Gradually whisk in milk, then add garlic powder, onion powder, salt, and pepper. Cook, stirring, until sauce thickens.
  9. Remove from heat and stir in shredded cheddar cheese until melted.
  10. Add cooked noodles, tuna, and peas to the sauce; mix well to combine.
  11. Pour mixture into the prepared baking dish and spread evenly.
  12. Top with the buttered panko breadcrumbs.
  13. Bake for 25-30 minutes, until bubbly and topping is golden brown.
  14. Let cool slightly before serving.
