Jamaican Pumpkin Rice

Ingredients
- 1 lb basmati rice
- 6 oz pumpkin, chopped into chunks
- ½ tbsp extra virgin olive oil
- 1 sprig thyme
- ½ tsp salt
- Water, as needed
Steps
- Peel and chop the pumpkin into small chunks.
- Place pumpkin in a pot with ½ cup water, thyme, and salt. Cook on medium heat until soft.
- Crush the cooked pumpkin in the pot (optional, for a smoother texture).
- Stir in the oil.
- Rinse the rice under cold water until the water runs clear.
- Add the rice to the pot and mix well with the pumpkin.
- Add enough water to sit about 1 inch above the rice, and stir.
- Cover the pot and cook on low heat until the water is absorbed and the rice is tender.
Notes
Butter can be used in place of extra virgin olive oil. Crushing the pumpkin is optional and mainly affects texture and color of the rice.
