Jamaican Saltfish Fritters

Ingredients

  • 1 lb saltfish
  • 2 cups plain flour
  • 1 small tomato, chopped
  • ½ scotch bonnet pepper, seeded and finely chopped
  • ½ tsp dried thyme
  • 1 stalk scallion, finely chopped
  • ¼ tsp black pepper
  • 1½ cups water
  • ¼ cup cooking oil

Steps

  1. Rinse excess salt off the saltfish, place in a pot, cover with water, and boil for about 10 minutes.
  2. Drain the fish and rinse with cold water to cool it.
  3. Once cool enough to handle, remove the skin, debone, and flake the fish.
  4. In a mixing bowl, combine the flaked fish, chopped tomato, scotch bonnet pepper, scallion, thyme, black pepper, and flour.
  5. Slowly add water while mixing until a thick, sloppy batter forms.
  6. Heat oil in a frying pan over medium-low heat. Scoop spoonfuls of batter into the hot oil.
  7. Fry on both sides for about 3 minutes, or until golden brown.
  8. Remove fritters and place on paper towels to drain excess oil before serving.
