Jamaican Saltfish Fritters

Ingredients
- 1 lb saltfish
- 2 cups plain flour
- 1 small tomato, chopped
- ½ scotch bonnet pepper, seeded and finely chopped
- ½ tsp dried thyme
- 1 stalk scallion, finely chopped
- ¼ tsp black pepper
- 1½ cups water
- ¼ cup cooking oil
Steps
- Rinse excess salt off the saltfish, place in a pot, cover with water, and boil for about 10 minutes.
- Drain the fish and rinse with cold water to cool it.
- Once cool enough to handle, remove the skin, debone, and flake the fish.
- In a mixing bowl, combine the flaked fish, chopped tomato, scotch bonnet pepper, scallion, thyme, black pepper, and flour.
- Slowly add water while mixing until a thick, sloppy batter forms.
- Heat oil in a frying pan over medium-low heat. Scoop spoonfuls of batter into the hot oil.
- Fry on both sides for about 3 minutes, or until golden brown.
- Remove fritters and place on paper towels to drain excess oil before serving.
