Vegan Ackee and Mushroom

Ingredients

  • 1 can ackee
  • 150 g mushroom (shiitake or king oyster), sliced
  • 40 g onion, sliced
  • 30 g scallion, chopped
  • 50 g tomato, sliced
  • 100 g bell pepper, sliced
  • 1 clove garlic, crushed
  • 3 sprigs dried thyme
  • 1/4 scotch bonnet pepper, seeds removed
  • 1/8 tsp black pepper
  • 1/4 tsp salt
  • 1 tbsp coconut oil

Steps

  1. Open the can of ackee, pour into a colander, and let drain.
  2. Heat coconut oil in a saucepan over medium-low heat.
  3. Add onion, garlic, scotch bonnet pepper, scallion, and thyme; sauté 2-3 minutes until onion softens.
  4. Add tomato and bell pepper; cook 2-3 minutes more.
  5. Add mushroom and cook until it releases its moisture.
  6. Add the drained ackee and stir gently to combine.
  7. Season with salt and black pepper.
