Vegan Ackee and Mushroom

Ingredients
- 1 can ackee
- 150 g mushroom (shiitake or king oyster), sliced
- 40 g onion, sliced
- 30 g scallion, chopped
- 50 g tomato, sliced
- 100 g bell pepper, sliced
- 1 clove garlic, crushed
- 3 sprigs dried thyme
- 1/4 scotch bonnet pepper, seeds removed
- 1/8 tsp black pepper
- 1/4 tsp salt
- 1 tbsp coconut oil
Steps
- Open the can of ackee, pour into a colander, and let drain.
- Heat coconut oil in a saucepan over medium-low heat.
- Add onion, garlic, scotch bonnet pepper, scallion, and thyme; sauté 2-3 minutes until onion softens.
- Add tomato and bell pepper; cook 2-3 minutes more.
- Add mushroom and cook until it releases its moisture.
- Add the drained ackee and stir gently to combine.
- Season with salt and black pepper.
